The Encyclopedia could be taken to imply that the name ship of this class may be called City of New Orleans. Or more probably it's just a joke reference to the song.

The LUG RPG supplement Ship Recognition Manual, Volume 1: The Ships of Starfleet calls this class a Fast Frigate (288m long, 15 decks, in service from 2366 - corrected to 2374 by a discussion board posting from the author, Steve Long) and makes it the triple nacelled Excelsior variant from the Deep Space Nine Technical Manual. Also listed are the U.S.S. Chimera NCC-71653, U.S.S. Ta'veret NCC-71777 and the U.S.S. Janeng NCC-72146; whilst The Dominion War Sourcebook: The Fires of Armageddon mentions the U.S.S. Hephaestos NCC-73469. The Portland is not mentioned at all, combined with the dates and the registries makes this all seem a bit suspect.

For a long time it was believed that the Challenger class built for the Wolf 359 graveyard scene in "Best of Both Worlds, Part 2" was a Constitution class with the nacelles removed and the upper pair of nacelles from a Constellation class. This now seems to be the result of miscommunication.
The true Challenger model was made from parts from model kits of the Galaxy class and a RU.S.S.ian Typhoon class submarine. The nacelles were mounted in an unusual one up, one down arrangement. See the Challenger Class Reconstruction at Ex Astris Scientia for more details.
In light of the above the U.S.S. Challenger NCC-2032 referenced on a display in ST VI is no longer thought to be a part of this class.
The LUG RPG supplement Ship Recognition Manual, Volume 1: The Ships of Starfleet calls this class a Light Cruiser (244m long, 8 decks, in service from 2355), and describes it as a Galaxy class saucer with two nacelles mounted above and behind, but with the one-up and one-down arrangement mentioned as a variant. There's also a confusing note about the NCC-2032 vessel. The Dominion War Sourcebook: The Fires of Armageddon mentions the U.S.S. Veliko NCC-62503.

A U.S.S. Korolev NCC-2032 was listed in "ST VI: The Undiscovered Country", it is not known whether it is the class vessel of this class. If it is, and considering the nature of the ship names and the consequent duration of the class, some sort of Oberth variant would not seem unreasonable.
The LUG RPG supplement Ship Recognition Manual, Volume 1: The Ships of Starfleet calls this class a Surveyor (310m long, 12 decks, in service from 2352), gives a description that makes this class a member of the Ambassador 'family' and lists the U.S.S. Korolev NX-59387 and the U.S.S. Gathev NCC-61628. The earlier U.S.S. Korolev NCC-2032 is said to have been a Miranda.

From the Encyclopedia, this is a small ship, comparable to the Defiant in length, (but with a larger internal volume). This is supported by David Stipes's figure of 625 feet (191m). The Deep Space Nine Technical Manual has mistakenly cut and pasted dimensions for the Norway, the Fact Files and the Magazine have both used this erroneous and far too large size. Although the DS9TM and LUG call it a Light Cruiser (there's also a reference to it being a Heavy Scout in one LUG product), I think that the Sabre could well be on of the pre-Defiant escorts.
The LUG RPG supplement The Price of Freedom also lists U.S.S. Shepard NCC-62079, U.S.S. Storta NCC-69531, U.S.S. Lu'ghara NCC-68749, U.S.S. Veldar NCC-69846, U.S.S. LaRue NCC-72315, U.S.S. Arian and U.S.S. Triumph in addition to the one below. (Although originally listed as part of this class errata published on the LUG web site state that the U.S.S. Denmark and U.S.S. Luxembourg are Norway class vessels.) The Dominion War Sourcebook: The Fires of Armageddon mentions the U.S.S. Tulwar NCC-71462.
The TNG novel The Battle of Betazed set in 2375 features the U.S.S. Scimitar, U.S.S. Tulwar and U.S.S. Katana, the last of which is destroyed during the course of the novel.

This class has long been described as: "A Galaxy-class saucer, attached directly to a Constitution engineering section (no connecting dorsal). Three Galaxy-style warp nacelles; the first two are about where you'd expect, the third is attached directly below the shuttlecraft bay." However, it now seems likely that no model was created for "Best of Both Worlds, Part II", (the dialogue reference to the Tolstoy was added in post production when a reference to the Springfield class U.S.S. Chekov was deemed to be too gimmicky.)
The LUG RPG supplements The Price of Freedom and Ship Recognition Manual, Volume 1: The Ships of Starfleet have a very different design for this class and call it a Heavy Scout (215m long, 6 (PofF) or 8 (SRM1) decks, in service from 2327) and also lists U.S.S. In the encyclopedia this ship is about the same length as an Intrepid class vessel (about 340m). The DS9 Tech Manual gives a length of 364.77m. In "First Contact" is was possibly shown to be slightly shorter than an Akira.

The wreckage seen at Wolf 359 has for a long time been described as: "Take the connecting dorsal from a Constitution-class ship. On one end, put a Galaxy-class (-ish) saucer. On the other end, put one Galaxy-class warp nacelle. That's it; no engineering section." This description seems to be rather more accurate than some other long standing ones (see Challenger and Rigel classes). The image to the right was published in the Star Trek Fact Files.

The 'mission scoutship' from Insurrection is called the Venture class in the "Star Trek: Armada" computer game. The Player's Guide for the TNG RPG from LUG implies that it's a Talon class. As I'd rather not see the Galaxy class U.S.S. Venture bite the dust I'm going with LUG. Also mentioned by LUG: U.S.S. Sparrowhawk NCC-75439.
According to the Decipher RPG supplement Starships these ships do not have NCC registries. This book does list the following names: U.S.S. Talon (here claimed to be the vessel used in Insurrection), U.S.S. Flamstead, U.S.S. Hale, U.S.S. Hubble, U.S.S. Lick, U.S.S Palomar, U.S.S. Siding, U.S.S. Wilson and the U.S.S. Yerkes.
